how do you get the cakes not to break or tear??
sometimes my cakes get deformed like a cone shape is formed on the top... and HOW do u cut the tiers so evenly!!?

Please don't apologize for asking questions - I am truly happy to help. It's fun being able to talk about stuff like this with other people. No one I know is really very interested in it :)

I'm afraid that I don' think I can share the recipe for the cake legally. It's from a book called Sky High, which I would REALLY recommend checking out. It's absolutely gorgeous AND delicious!

Tearing... You mean after removing it from the pan? I'm not really sure. It's happened to me quite a few times, and it's very frustrating. I really am no expert (but thanks! *hug*), but I think it has to do with the cake being under-baked. After removing the pans from the oven, try letting them cool on a rack - in the pan - for about ten minutes before inverting them on the rack to cool the rest of the way. I find I have more tears when I'm being impatient and flip the cake too fast :P

Oh, these got domes on them :P You just slice them off! I like working with partially frozen cake layers because they don't apart so easily. After cooling I just stash them in the freezer for about 30 minutes. Then I place the layer on top of two stacked cake stands (I'm kinda tall and I like the cake layer to be high up to work on it :)), and carefully trim the top with a serrated knife. Do this for all layers, and then determine which is the shortest or just how high you want each layer to be. Then pull out your handy-dandy ruler and trim away!

I used to be afraid of cutting off too much because I thought of it as a waste, but if it evens it up, it's worth it to me :) If you need further explanation, please don't hesitate to ask!

I love baking and cooking... so i gotta have money to do it!

I should go to cooking or baking school or something... im studying to be a graphic designer so i dont have that kinda time!
