Description

This presentation and recipe is straight from Martha Stewart, except, that's not completely true. It isn't from her because I am convinced that she doesn't come up with any of the things she backs. She's just a face for an impossibly impressive crew of people that get little to no recognition.

But those are just my sentiments, of course.

Whoever did come up with this is very creative, and I'm happy they shared their technique!

Hummingbird Cupcakes and related links

I also made some cinnamon sugar walnuts to accompany the cupcakes, but I didn't really measure, so here's an approximated version of what went down.

Cinnamon Sugar Walnuts
2 handfuls of walnuts
1/2 c (ish) sugar
Cinnamon, to taste
Water

Line a baking sheet with aluminum foil or parchment paper and preheat the oven to 350F.
Put the walnuts, sugar and cinnamon into a glass bowl, and add enough water to make a runny mess of it all. Microwave about 5 minutes, until sugar caramelizes, stirring every minute or so. Pour onto the baking sheet, breaking apart the pieces. Place in oven for 5-6 minutes until thoroughly dried and browned. Just be careful because they burn easily!
Chop further, if desired.

Notes:

  • I didn't eat one, so I can't tell you how they taste. I do know, however, that they smell very strongly of banana!
  • I baked my pineapple slices FOREVER. The time recommended in the recipe is not sufficient.
  • I halved the above recipe and got 21 cupcakes from it when I should have gotten just 12. Just a tip ;P
