Well, I did what you aren't supposed to do; I made macs on a rainy, humid day.

But they worked! I under-mixed the batter a bit, so some have peaks, but I'm fine with that.

These are sprinkled with poppy seeds and filled with Pierre Herme's incredible lemon cream.

Lemon Cream via Fanny of Foodbeam

For the mac shells:
110g groud almonds
200g powdered sugar
3 egg whites (at room temp. Mirowave for 5 seconds, stir, then microwave 5 seconds more)
30g granulated sugar

I like the blur effect, it looks great! Delicious too...and I don't even like lemon flavored treats myself. :)
